<h3>Raw Key Lime Tartlets (cheesecake)</h3>
<p>serves 6</p>
<p><em>Adapted from a recipe from <a href="www.detoxinista.com" target="_blank">www.detoxinista.com</a></em></p>
<p>Ingredients:</p>
<h4><em>For the Crust:</em></h4>
<p>1 cup walnuts or pecans<br />
1 tablespoon coconut oil, melted<br />
1 tablespoon pure maple syrup<br />
1/2 teaspoon vanilla extract<br />
pinch of sea salt</p>
<h4><em>For the Filling:</em></h4>
<p>1 cup raw cashews, or 1/2 cup raw cashew butter<br />
3 tablespoons coconut oil, melted<br />
3 tablespoons raw honey<br />
1/4 cup + 2-3 T fresh lime juice (start with adding 2T and add more to taste)<br />
1/2 teaspoon vanilla extract<br />
pinch of sea salt</p>
<p>Directions:</p>
<p>Line a standard muffin tin with 6 parchment baking cups, and set aside.</p>
<p>To prepare the crust, pulse the walnuts or pecans in a blender, until a fine powder is formed. (Be careful not to over-process, as you don’t want it to become a nut butter.) Add in the melted coconut oil, maple syrup, vanilla extract and salt, and pulse again until uniform dough is created. (if using a high powered blender (Vitamix or Blendtec) just all add ingredients into the blender and tamper until the correct consistency.</p>
<p>Scoop the dough by a heaping tablespoon, and drop it into the bottom of each of the 6 baking cup liners. Use your fingers to press the crusts down firmly, and place the pan in the freezer to set.</p>
<p>To prepare the filling, place the dry cashews in a blender with the rest of the filling ingredients, and blend until a silky smooth batter is formed. Adjust flavors to taste (may need to add more lime juice or more raw honey), keeping in mind that the final chilled desserts will taste slightly less-sweet than the room-temperature batter.</p>
<p><em>*Note: If you’re using prepared cashew butter instead of the whole cashews, you can skip the blender all together and mix all of the filling ingredients well in a medium bowl.</em></p>
<p>Remove the pan of crusts from the freezer, and divide the filling batter evenly among the six cups. Return to the freezer to set for at least 3 hours before serving, or until they are completely firm.</p>
<p>Serve directly from the fridge (for a cheesecake texture) or freezer (which gives you more of an ice-cream texture), and keep any leftovers well chilled.</p>
<p>Serve with fresh berries on top or crushed up berries as a glaze.</p>

				<content:encoded><![CDATA[<input class='jpibfi' type='hidden' data-jpibfi-url='http://www.puregoodness.net/health/a-haircut-lessons-about-health-and-god/'/><p><span id="more-4292"></span>Have you ever had that one horrible haircut experience? Today was haircut day. It is that day that arrives about every 4-6 week s or so. Haircut experiences are not pleasant for me. I go to a place close to where I live and since I go at random times, the person cutting my hair is different every time. For many this may not be a problem, but I don’t see it that way. With every new person comes a different style of cutting, trimming, learning and adapting to arrive at my desired outcome. If I don’t communicate my expectations well, sometimes disaster can occur and I can walk out looking like cut grass after using a dull mower. Not good.</p>
<p>Why has this been a problem for me? Because at one time in the past a couple years ago, I went through one of those horrible haircut experiences and looked ridiculous frankly. You know what I’m talking about; we’ve all had one of those. You literally have to go to another salon to get the disaster fixed from the first salon. Naturally, upon going and getting your haircut the next time, those wonderful emotions surge up from the past and are experienced as if it were happening all over again. The fear of them getting it right, the anger that it could be done wrong again, the sadness that my hair might look like a patchy area of grass, not to mention the knock to my pride and experiencing humiliation. Wow, this haircut just became very emotionally traumatic…and it happens every single time every time I get my haircut.</p>
<p>We need to remember that although consciously our traumatic haircut happened years ago and we may not remember it all that well, for the subconscious everything is happening in the present. What we experienced back in the past (our traumatic memory) is literally being relived subconsciously without us even knowing it. Often times in practice this comes out as people saying, “I don’t know why I feel this way all the time.” Something happened in the past and you are reliving the past subconsciously in the present moment. This happens to everyone and most of the time even when we think we have “gotten over it”, we really haven’t. Those old painful memories are constantly replaying like a skipping or broken record.</p>
<p>So what was different about the haircut today? As I help others to be aware, conscious and mindful of their emotions (in order to release and let them go and consequently heal), I also need to be mindful of my own emotions and that is what I did while getting a haircut today. I was about 4 minutes into the haircut and I suddenly became mindful that my breathing was very shallow. Also, my shoulders were very tense as were my legs because I was clenching them together. What was I experiencing? Fear. It was the same fear that I had experienced years ago. So what did I do?</p>
<ul>
<li>Acknowledged what was mine. I took responsibility for my fear. I owned it. Within lower levels of consciousness is this tendency to project blame and put our power outside of ourselves. This could be experienced as the thought “the gal cutting my hair is making me fearful.” Be honest, how often do we do this? “They” made me angry, fearful, sad, etc… But this isn’t really true. This situation is simply serving as a way to bring out that which is within already. The fear was mine, therefore, I owned it. I am fearful. By owning what is ours, it means we can choose what to do about it. By projecting blame, we are victims and can’t do anything about “that person or experience.”</li>
<li>Let it go. Because we own something, we can make the choice to release and let it go. We all have this power. The haircut served as a mirror of what I was holding onto inside. All of life does this for us when we experience a negative emotion. People, situation and events serve to pull out the things we need to face in ourselves. If anger or rage comes out because someone cuts you off in traffic, I can assure you it is not “the fault” of the other person. That person is a gift actually because they serve to help you see something that is already within you. You are angry and ragefull. Why? Because something happened in your past to solidify these things. Be thankful for the situation, own it and make the choice to release it and let it go. So how did I do this? I first began to take deep diaphragmatic breaths (using my stomach mainly). Using your breath in this way is the first step to letting something go. I was restricting my breath because I was holding onto the fear. Next, I literally and lovingly just said to myself, “Let go of the fear.” It really is that simple. If this is not concrete enough, those who are familiar with EFT (Emotional Freedom Techniques), if you are somewhere you can’t tap (like in the haircut chair), simply visualize yourself tapping. The effect is the same.</li>
<li>Replace the fear with something else. A very famous verse says, “There is no fear in love, perfect love casts out all fear.” The opposite of fear is love. The energy of love is very healing. I was not experiencing love in that chair; I was caught up in my fear. I made a choice in that instant to replace the fear with love, joy and peace. What immediately happened? I continued to breathe deeply. My shoulders and legs let go of the tenseness and relaxed. I even carried my fear to its logical conclusion, or the worse possible scenario, which also helped me to let it go. My thought was, “So what if she butchers my hair and I have to shave it all off?” Everything still would be ok, much worse things in life could happen. The power of the fear dissipated. It’s not a big deal, although if you are a woman, losing all your hair could be slight more of a big deal. The thought was carried to its logical end helped me to let it go. The woman who was cutting my hair was a professional and of course if there was a problem she could fix it. Again, not a big deal. My fear was replaced with peace that it would turn out perfectly. I no longer projected my fear onto her, which alone could have caused her to mess it up since we are all energetically linked and affect one another.</li>
</ul>
<p>What was the result? My hair actually turned out just the way I wanted it to and instead of experiencing fear the entire time, I began to experience the qualities of Divinity, of God right there in that chair. God is love, joy and peace; those are his attributes and qualities. Who doesn’t want to experience that? I literally connected with God in that chair. We have far more power than we think, especially when it comes to our past and the emotions we subconsciously hold onto. We can choose to really let go of our past (including the negative haircuts) and experience love, joy and peace. So I encourage you to be more mindful of what you feel, own your feelings (even ask where they came from in the first place), release them and replace them with love, joy and peace. <p>With what two words can true healing begin to take place in your life?</p>
<h3>Taking Responsibility.</h3>
<p>What is the opposite of taking responsibility for your health?  Blame.</p>
<ul>
<li><img class="alignright  wp-image-4287" style="margin-left: 20px;" alt="choices-pic" src="http://www.puregoodness.net/wp-content/uploads/2013/04/choices-pic.jpg" width="307" height="214" />I have bad genetics. It is my genes fault.</li>
<li>My parents fed me bad food. It is my parents fault.</li>
<li>I work too much to be healthy. It is my work’s fault.</li>
<li>I don’t have the money to be healthy. It is my finances fault.</li>
<li>I don’t have time to be healthy. It is time’s fault.</li>
<li>I have cancer. It is the cancer’s fault.</li>
<li>It is the chocolate, cheese, beer, or candy’s fault. It is food’s fault.</li>
</ul>
<p>Victim. Victim. Victim. Let’s be honest, is this really loving yourself?</p>
<p>People with lower levels of consciousness inevitably want to place blame on everything. Secret internal payoffs exist as a result of blaming everything and everyone for why you may have the health problems you do. What happens as a result of blaming everything? We literally place all of our power outside of ourselves and we make ourselves very small. We believe in our smallness. We believe we are victims. We are literally screaming to the world and projecting outside of ourselves that we are victims. Be honest with yourself, are you being a victim?</p>
<p>If you look around you, everything in the world from cars to cell phones to the computer you are using was created by a human, someone like you. We were born to be creators, it is a part of our nature. What if I told you that the reason why you have the health problems you do is because you CHOOSE or CREATED them? Either consciously or subconsciously you choose them. You have chosen the health problems you have whether you have realized it or not. This doesn’t feel good to hear this, does it? Did you just say with indignation, “I didn’t choose the health problems I have!!!”?</p>
<h4>How do we really choose the health problems we have?</h4>
<p><img class="alignright  wp-image-4285" style="margin-left: 20px;" alt="back-pain" src="http://www.puregoodness.net/wp-content/uploads/2013/04/back-pain.jpg" width="251" height="166" />For example, in a physical sense (and mental and emotional sense) our spine is what supports us. People in records numbers have lower back pain these days. One of the laws of consciousness that I find to be true every day in practice is “what one holds in the mind tends to manifest in the body.” How would this apply to lower back pain? The Chinese have known for thousands of years that one key emotion is attached to each of our major organs. The emotion of the kidneys/adrenals is FEAR. This makes sense given the adrenal glands react to the perception of danger (fight or flight). Lower back pain generally points to financial fear or fear in general. It is this overall fear that life/God is not going to support us.</p>
<p>So what do we get? A back that doesn’t support us. You may go to your medical doctor with complaints of lower back pain. You may be given a drug or even have surgery, but this most likely will not remedy the problem, especially if you are still holding onto fear. One may say, “I didn’t choose this back pain!!” In this way, if you are honest, this is being a victim. What you did choose is fear. Fear simply manifested the problem. You can choose to let go of fear, but you have CHOSEN not to. We see the next bill in the mail and we get anxious, stressed, panicky, nervous (all emotions within the family of fear). So do we create the problem? Yes. We must take responsibility. We created the problem and by taking responsibility, we also realize we have great power. If we created it, we can un-create it and choose peace, love and joy about life/God supporting us. The choice is yours. Subconsciously you chose all along, even though you consciously may not have been aware of it of how fear created the pain.</p>
<p>Do you want to continue to be a victim and give your power to things outside of yourself? Or do you want to be introspective and look at what you may be choosing without even realizing it? The journey towards health can begin when we decide to take responsibility and let go of our shame, guilt, apathy, sadness, fear, covetousness, anger and pride (and every emotion in between). All of these emotions are destructive to life and cause health problems. You simply cannot hold onto years or a lifetime of fear (or other negative emotions) and not get some kind of problem. Hold onto a lifetime of fear and eventually our back can erode into nothing.</p>
<p><img class="alignleft size-full wp-image-4284" style="margin-right: 20px;" alt="glass" src="http://www.puregoodness.net/wp-content/uploads/2013/04/glass.jpg" width="149" height="169" />I love this analogy. Let’s say I hold up a glass of water in my hand and ask you how much it weighs. You may respond by saying 12 ounces or one pound. But weight in this instance is about perspective. What if I hold onto the glass with the water in it for 1 hour, is it heavier? Of course. What if I hold onto the glass for a whole day? It will be extremely heavy. The more I hold onto the glass the heavier it becomes to the point where my arm eventually will hurt and develop pain. You cannot hold onto years or a lifetimes worth of negative emotions that you have experienced from your past and not get health problems. It is impossible. Just like the weight of the glass causing eventual pain, the emotions get heavier and heavier and eventually manifest in the physical body.</p>
<p>Will you continue to choose to hold onto the hurts and pains of the past? What are you going to choose today? Will you continue to be a victim and remain small or take responsibility and start realizing your power and greatness? The choice is literally yours.</p>
<p>I have seen back pain disappear in very short periods of time in people once their fear is let go of. One of the best and fastest ways to let go of the emotions of the past is with energy work techniques such as Emotional Freedom Techniques, Mental Field Therapy, Body Talk, Psychokinesiology, and Neuro Emotional Technique. <p style="text-align: left;">This doesn&#8217;t make one iota of sense.  This is the equivalent of saying smoking cigarettes is good for your health (doctors used to endorse cigarettes and have been wrong before).   How can one of the most toxic substances in the world sit in your mouth and not have an effect on your health, especially being inches from the brain?   Without exposure to anything, they say it is harmless.  They are right.  However, in the human mouth it doesn&#8217;t just sit there.  Two main things cause vapors to be released:  heat and friction.  You would never be able to consume something warm or eat ever again.  Take an amalgam in your hand and rub on it with a spoon or knife and use an instrument to test the vapor that is released.  The amount of mercury released by this friction releases 2-5 times what would be considered safe level s of vapors by OSHA.  This happens in the mouth many times per day.  It is far from harmless.</p>
<h3 style="text-align: left;">2.  Mercury damages the tissue of things around it.</h3>
<p style="text-align: left;">Clinically, it damages the things that are closest first and then it moves to other parts of the body.  The sublingual, submandibular and parotid gland are the first parts to be affected.  Other parts to mention are the eyes, sinuses, the brain and the thyroid.</p>
<h3 style="text-align: left;">3. Mercury doesn&#8217;t leave the body unless you are targeting it specifically.</h3>
<p style="text-align: left;">Once the damage is done from Mercury, it is like glue and when it goes to other parts of the body, it stays there.  Heavy metals must be chelated or removed from the body.</p>
<h3 style="text-align: left;">4.  Damaged tissues need direct support to be regenerated.</h3>
<p style="text-align: left;">Eating good organic food, exercising, juicing or taking good quality whole food supplements is not enough to repair the damage.</p>
<p style="text-align: left;">Mercury fillings damage and they do a really great job of it.  The parotid gland is the largest salivary gland in the mouth.  It has so many fascinating and critical functions for the health of the body.   This is important for three main reasons.</p>
<ul>
<li>Digestion.  Do you get gas?  Do you get bloated?  Do you have indigestion?  All of these symptoms  can be the result of poor digestion  or not breaking down food.  The parotid gland emits amylase, which is the primary enzyme that helps your body breakdown carbohydrates.  The breakdown of food is critical if you want to absorb and metabolize your food.  Many naturopaths have long believed that impaired digestion is the start of what brings on most disease in the body.   The other components in the saliva help to clean the upper digestive tract as well.</li>
<li>Immune System.  The parotid gland emits lysosome, which is an organelle that contains enzymes that dissolve or destroy both viruses and bacteria.  In other words, it is the first line of defense our body has against things our body doesn&#8217;t like that enter into our mouths.   This is why they are commonly called “suicide sacs”.  Lysosome gets rid of waste and cellular debris, which leads to our next point.</li>
<li>Lysosome is thought to be critical to help the body detoxify from heavy metals and heavy chemicals.  It may serve as one of the most critical ways our body naturally detoxifies.</li>
</ul>
<h4 style="text-align: left;">The function of the parotid gland is therefore critical for digestion, your immune function and for detoxification.  Its role cannot be understated.</h4>
<p style="text-align: left;"><img class="alignright" style="margin-left: 20px;" title="mercury fillings" alt="" src="http://www.drscottgraves.com/wp-content/uploads/2013/04/mercury-fillings.jpg" width="270" height="180" />I personally had six mercury fillings in my mouth for more than 10 years.  They were removed and replaced with resin fillings about five years ago.   When I was tested using kinesiology, it was determined that my parotid gland was functioning at 13%.  Thirteen percent!!!  Like many others, I was full of mercury and was beginning to suffer from digestive symptoms in addition to getting sick.  If you have had just one mercury filling in your mouth for any amount of time, your parotid gland has surely suffered.</p>
<p style="text-align: left;">There is good news.  The parotid gland can be supported, cellular health can return and regeneration is possible.  Here is how it can be done.</p>
<ul>
<li><strong>Parotid PMG</strong> from Standard Process provides uniquely derived nucleoprotein-mineral extracts that support cellular health.  It also supports healthy parotid gland function.</li>

<li><strong>Chew your food to a soupy mush</strong>.  Many people take a bit, chew three times and swallow.  Give you body a change to digest the food you eat and your immune system the opportunity to defend you by chewing your food many times.  Slow down and enjoy your food.  Proteins (meats) are the hardest to breakdown and it is suggested that you chew as many as forty time before swallowing each bite.</li>

I ran across these recipes and can&#8217;t wait to try them all! I was a little impatient in trying them first then posting them here, so bare with me and share if you have some tweaks we should do.</p>
<p>We like to use local honey, natural sweeteners, organic grains, and especially love our <a href="http://puregoodnessandjuiceplus.com" target="_blank">JP Complete shake mix</a> in all our bars! So yummy, filling and healthy!</p>
<h3>#1 Oatmeal Raisin Protein Bars</h3>
<p>2 c organic rolled oats<br />
¾ c raisins (exchange for dried cranberries for the holidays, yum!)<br />
1 c vanilla <a href="http://puregoodnessandjuiceplus.com" target="_blank">JP Complete protein</a><br />
3 Tbs ground flax seeds<br />
2 tsp cinnamon<br />
1 c Kashi Go Lean Crunch cereal, crushed<br />
1 cup honey<br />
½ cup natural peanut butter<br />
½ c NO SUGAR apple butter or unsweetened applesauce<br />
2 tsp vanilla</p>
<p>Mix first 6 ingredients together in a large bowl and set aside. Warm honey on stovetop. Remove from heat and stir in peanut butter, apple butter and vanilla, mix well. Immediately add honey mixture, a little at a time, to the dry ingredients, mixing as you go, until well incorporated. Press into 9&#215;13 pan w/ rubber spatula and bake @ 350 for 15 minutes. Cool. Top with optional icing below.</p>
<p>Icing: (optional)<br />
1 c powdered organic sugar<br />
1 Tbs vanilla almond milk (unsweetened)<br />
1 tsp vanilla</p>
<h3>#2 Peanut Butter Krispies Protein Bars</h3>
<p>4 c brown rice krispies<br />
½ vanilla <a href="http://puregoodnessandjuiceplus.com" target="_blank">JP Complete protein</a><br />
½ c local honey<br />
½ c natural peanut butter<br />
1 tsp vanilla</p>
<p>Combine cereal and Complete in large bowl &amp; set aside. Warm honey on stovetop. Add peanut butter and vanilla. Add to dry mixture &amp; stir until well incorporated. Press into 9&#215;9 inch pan &amp; cut into desired size.</p>
<h3>#3 Peanut Butter Chocolate Chip Protein Bars</h3>
<p>1 c chocolate <a href="http://puregoodnessandjuiceplus.com" target="_blank">JP Complete protein</a><br />
1 c  old-fashioned oats, uncooked<br />
1 ½ c Kashi Go Lean Crunch cereal, crushed<br />
¾ c local honey<br />
1 c natural peanut butter<br />
4 oz organic unsweetened Applesauce<br />
2 ½ tsp vanilla extract<br />
2/3 c semi-sweet chocolate chips (we like <a href="http://www.amazon.com/Enjoy-Life-Semi-Sweet-Chocolate-10-Ounce/dp/B000HDJZWO/ref=sr_1_3?ie=UTF8&amp;qid=1366813465&amp;sr=8-3&amp;keywords=enjoy+life" target="_blank">Enjoy Life chips</a>)</p>
<p>Combine oats, Complete and fiber cereal in a large bowl and set aside. Warm honey on stovetop. Remove from heat and stir in peanut butter, applesauce and vanilla until smooth. Immediately add honey mixture to the dry ingredients and mix until well incorporated. Press into 9&#215;13 pan, or smaller if you want thicker bars, w/ rubber spatula. Sprinkle chocolate chips on top and press into bars. Refrigerate 20-25 min or until firm and cut into bars. Store bars in an airtight container.</p>
<h3>#4 Vanilla Almond Crunch Protein Bars</h3>
<p>1 c vanilla <a href="http://puregoodnessandjuiceplus.com" target="_blank">JP Complete protein</a><br />
1 c brown rice crisp cereal<br />
1 ½ c Kashi Go Lean Crunch cereal, crushed<br />
¾ c local honey<br />
1 c natural almond butter<br />
4 oz organic Applesauce<br />
2 ½ tsp vanilla extract</p>
<p>Combine rice cereal, Complete and fiber cereal in a large bowl and set aside. Warm honey on stovetop. Remove from heat and stir in almond butter, applesauce and vanilla until smooth. Immediately add honey mixture to the dry ingredients and mix until well incorporated. Press into 9&#215;13 pan, or smaller if you want thicker bars, w/ rubber spatula. Refrigerate 20-25 min or until firm and cut into bars. Store bars in an airtight container.</p>
<h3>#5 Oatmeal Butterscotch Protein Bars</h3>
<p>1 c vanilla <a href="http://puregoodnessandjuiceplus.com" target="_blank">JP Complete protein</a><br />
1 c quick cooking oats, uncooked<br />
1 ½ c Kashi Go Lean Crunch cereal, crushed<br />
¾ c local honey<br />
1 c natural peanut butter<br />
2 ½ tsp vanilla extract<br />
2/3 c butterscotch chips</p>
<p>Put Kashi cereal in Ziploc bag and crush with rolling pin. Combine oats, Complete and cereal in a large bowl and set aside. Warm honey on stovetop. Remove from heat and stir in peanut butter and vanilla until smooth. Immediately add honey mixture, a little at a time, to the dry ingredients, mixing as you go, until well incorporated. Press into 9&#215;13 pan. Sprinkle butterscotch chips on top and press into bars w/ rubber spatula. Refrigerate 20-25 min and cut into bars. Store bars in an airtight container. Makes 20 bars</p>

<p><em>*make any of these VEGAN by omitting the honey and using pure maple syrup!</em></p>
<p><em>*Note: you can individually wrap each bar in wax paper and then store bars in airtight container and keep in refrigerator for ALL varieties.</em></p>

Whether you&#8217;re a grown up or a kid, it&#8217;s hard sometimes to keep good snacks around. You want snacks that will sustain you til dinner, will keep your blood sugar stable, and keep the &#8220;h-angry&#8221; away!!</p>
<p>If you&#8217;re like me, I have to have a salty snack at night.. It&#8217;s something I just have to do. But to choose a healthy option is tough sometimes. What I like best is organic popcorn popped on the stove with coconut oil. A step healthier would be to air pop it.. I&#8217;ll have to make that step soon!</p>
<p>Here are 20 ideas for you!! I like to keep most of them dairy free, but we do have some greek yogurt and local eggs show up in our home from time to time. You can also make most of these gluten free by using Nut Thins or other GF products!</p>
<h3>20 Low Glycemic Snacks:</h3>
<p>1. An apple with the skin with 1 ingredient peanut butter or almond butter</p>
<div>
2. Whole wheat crackers with natural 1 ingredient peanut butter or <a title="Simple Hummus" href="http://www.puregoodness.net/nutrition/simple-hummus/">hummus</a></p>

6. A toasted whole wheat pita with bean dip</p>

7. Organic Soybeans (Edamames) with a little salt</p>

16.  Wrap-ups: Spread a small whole-grain tortilla with a teaspoon of mustard and wrap-up one ounce of any lean meat, including turkey or chicken breast. Add spinach and cucumber for a crunchy, delicious snack!</p>
<div>
17. Mini-pita pizza: Top a 1/2 (100%) whole-grain mini-pita or English muffin with (sugar-less) tomato sauce and a little low-fat mozzarella and oregano to taste: broil till cheese melts.</p>
<div>
18. <a title="Latin Lovers Quinoa Bowl" href="http://www.puregoodness.net/featured/latin-lovers-quinoa-bowl/" target="_blank">Quinoa salad</a>. Cooked quinoa is a complete protein. Treat it like a pasta salad and add your fav veggies and homemade salad dressing.</p>

<p>I LOVE Latin inspired dishes.. flavors that are garlicky, limey, cilantro-y, and smokey! nom, nom, nom!</p>
<p>So, here it is. This is kid approved. My three little ones loved it!</p>
<h2>Latin Lovers Quinoa Bowl</h2>
<p>3 cups quinoa, rinsed<br />
5-6 cups water<br />
1 tbs. extra virgin coconut oil<br />
1 can black beans, drained &amp; rinsed<br />
1 white onion, cubed<br />
1/2 large sweet potato, cubed<br />
2 low sodium, vegan bouillon cubes<br />
1 tsp dried oregano<br />
1 tsp ground cumin<br />
2-3 garlic cloves whole<br />
2 bay leaves<br />
salt and pepper<br />
splash of lime and cilantro to garnish</p>

<li>Bring all the ingredients to boil, turn down.</li>
<li>Simmer until sweet potato is cooked through and quinoa is tender.</li>
<li>The water will be absorbed completely&#8230;about 15-20 minutes.</li>
<li>Fluff with a fork, serve over raw spinach.</li>
<li>Sprinkle some lime over the dish and garnish with cilantro!</li>

<p>You need one! It comes with a small square shape chop and a larger one. It makes meals like this one so much faster!! The sweet potatoes are all evenly square and the onions don&#8217;t make you cry as long!! It&#8217;s a must have!!</p>
