Our friends the VandeBogarts brought an amazing chili to our dinner last night! It was so yummy, we had to share the recipe here. It’s made with all REAL ingredients and your body will thank you!
VandeBogart Famous Lentil Chili
4 cups vegetable broth
4 cups water
1/2 white onion, chopped
2 green onions (white and green parts)
1 large green bell pepper, chopped
6 or 7 cloves garlic, finely chopped
3 (ish) tablespoons chili powder
1 tablespoon cumin
1-2 tablespoons smoked paprika
1 (16-ounce) package brown lentils (about 2 1/4 cups lentils)
2 (15-ounce) cans no-salt-added diced tomatoes
1/4 cup chopped cilantro
2 teaspoons Old Bay ![]()
2 tablespoons salt, or to taste
Throw in crock pot for about… 6 hours.

I make this recipe 3-4 times a month!! LOVE it …… I have added a couple tweaks to it:
I always use fresh ingredients because I hate canned veggies
so I throw the beans in water, soak them overnight, then the next morning throw everything in the crock pot!!! I even make my own vegetable stock
(use all the cut up veggie stuff that you usually throw away, and boil it all – I usually let it simmer for about 45 mintues, then strain it and add it to the crock pot….)
use fresh tomatoes chopped up; and I use 1/2 bag of lentils, and 1/2 bag of beans

Hey…I want to try this but don’t have a crock pot. Do you think I can simmer it?
sure! I’ve done this before too! just keep an eye on it for the moisture.. maybe add a little more water if it’s staying in all day!
