My husband has been on a roll lately with some yummy creations in the kitchen. Not only is he a talented media producer with GlobalMediaGroup, but he’s pretty creative around pots, pans and VitaMixers!
He loves Caesar dressing, but when we order it at restaurants or buy it in a jar, you are faced with many extra ingredients that we shouldn’t have. So, here’s a simple and homemade recipe for you!! Enjoy!
Classic Caesar Dressing
- ¼ cup parmesan cheese (grated)
- 4 anchovy fillets
- 2 egg yolks (local and organic)
- ¼ teaspoon Himalayan salt (to taste)
- ¼ teaspoon pepper (to taste)
- 1 lemon, juice and zest of
- ½ cup extra virgin olive oil (good quality)
- 2 garlic cloves
Directions:

In a VitaMix or blender, mix egg yolks, garlic and anchovies into a paste.

Add remaining ingredients EXCEPT olive oil. Mix a few seconds.

Slowly add olive oil until dressing is thick and creamy. Add more or less olive oil depending on desired consistency.

Serve mixed in chopped romaine lettuce. Toast some old bread for croutons and sprinkle with extra parmesan! Enjoy!
