Just in time for St. Patty’s day!! Something nice and green for you to try!!

This recipe is vegan and raw! You’ll love having this in your fridge to add to dishes throughout your week.  The walnuts add a nutty flavor as well as some protein and healthy oil! It came with a little inspiration from my dear friend Mihaela Law of StyleMayn.com. She is always inspiring me to keep trying new things with my VitaMix and in the kitchen!! I just love that girl!!

1 large handful of fresh basil
3 large handfuls of spinach
4 garlic cloves
salt and pepper to taste
2 Tbs red wine vinegar
Juice of 2 lemons
1/4 cup olive oil, maybe more for smoothness
1 – 2 cups walnuts

Place all ingredients in the Vitamix or strong food processor and process until smooth. Add more olive oil for a smoother texture. The measurements are really something you can play with… add a little more citrus if you like it more like a vinaigrette. Serve over whole wheat noodles, raw zucchini spaghetti, baked spaghetti squash, or rice noodles!
